Dee-lish Vegan Pumpkin Muffins [RECIPE]
Everywhere you look this time of year, it’s pumpkin evvverythang – skincare, lattes, candles, food… ya betta believe Imma come atcha with some fantabular, lip-smackin’ vegan pumpkin muffins! These are super simple to whip up, and they’ll make your whole house smell amazing!!
Dee-lish Vegan Pumpkin Muffins
- 1 3/4cups flour
- 1 1/4cups vegan sugar
- 1 tbsp baking powder
- 2 tsp pumkin pie spice
- 1 cup canned pumpkin puree
- 1 tbsp Coconut Dream vanilla non-dairy yogurt (makes muffins extra moist & fluffy)
- 1/2 cup vanilla non-dairy milk (I used almond milk)
- 2 tbsp maple syrup
- coconut whipped cream (learn how to make it from scratch here)
Preheat oven to 400°F. Combine and mix dry ingredients in a bowl. In a separate bowl, combine and mix wet ingredients. Thoroughly wet and dry ingredients together by hand until all the lumpies are gone. Fill cupcake liners 2/3 full and bake for ~30 minutes (check with a toothpick to make sure they’re done). Let cool and plop a dollop of coconut whipped cream on each muffin. Snarf ’em down and enjoy! xx
